Adding shredded coconut to a classic chocolate chip cookie was a great idea. The recipe that inspired the above cookies was from the awesome La Dolce Vegan!. The coconut added a bit of a tropical feel to these little treats. I'll remember that when the Atlantic Ocean becomes too cold to swim in and the air too chilly in the coming weeks. I'm dreading the end of summer! I'm trying to take in all of the beach that I can before it's just too cold. I'll post some beach pics soon! In the meantime, I'm super excited about Sarah Kramer's new book for vegan travelers, Vegan a Go-Go. It's coming out on September 1st!

I can't wait for that book either! Yea! And those cookies look awesome. I adore coconut.
