Cookies and Cream Vegan Ice Cream!

Yum! This came out better than I imagined! I used this recipe from A Vegan Ice Cream Paradise, but I used plain sugar free Silk, brown sugar, and Chocolate Country Choice Organic Sandwich Cremes instead of Oreos. The results were creamy, with crunchy chocolatey bits throughout. It was really as good or better than any cookies and cream ice cream I can remember having.
